We were working on a salted melon dish today and were looking for an element to harmonize the salt and the melon. It was not a far stretch to reach for cucumbers. I like uniform shapes and a triangle with a rounded edge seemed like a nice way to present pieces of cucumber. This smaller size also made sense since the cucumber was an accent note rather than a star player. We seasoned the cucumber with Japanese rice seasoning; perhaps a bunt but really a well blended mix to accent the fruit. We put the seasoned cucumber for a brief run in our vacuum machine to help marry the flavors, brighten the appearance and add juciness to the texture of the fruit. These small pieces pack a large punch both in flavor and visual appeal. We paired them with melon but there is a wide spectrum of dishes where they will lend a hand.
