Inspired by Don Lee's buttered popcorn rum, we made popcorn flavored butter and then utilized Cory's technique of using the blender to expedite the fat washing process. We made popcorn butter mezcal. Once it was infused we used our agar clarification technique to make it crystal clear. Tomorrow we will be using it in one of the cocktails.
