We are back at Woodberry Kitchen and in the kitchen. As is the culture here, coffee is part of the big three. (the other two are food and wine, not forgetting cocktails and other libations). One fundamental we continue to explore it the relationship of salt in foods. We have been seasoning our coffee and cocktails for years, although we had not sat down and calculated exact amounts.
Today we took the time to season our coffee with a range of salt, from 0.0 to 0.5%. The results were amaazing. The amount of salt needed to enhance a cup of coffee was substantially less than the 0.5% we look at as a base for seasoning.
