The noodles were sparked by a lack of good chow fun (or chinese restaurants) near us. Rice noodles in the pasta machine were a challenge but this ziti worked out nicely.
The sauce is a blend of seared sweet sausage blended with a puree of onion and jalapeno and topped with minced kimchi. To balance the sauce we added some red wine and a splash of half and half. It may not be traditional chow fun but it definitely satsified the craving.
