The crispy garlic is made by slowly cooking it in olive oil. When the garlic is browned we remove it from the oil and season it with salt. Then we saute broccoli in the garlic oil and when it is cooked we sprinkle the toasted garlic on top. The garlic chips provide both crunch and a boost of toasted garlic flavor. It's a dish that we've cooked too many time to count, especially since it is one of Amaya's favorites. They key here is breaking out of our routine. Instead of browning the garlic and then adding the broccoli we added a step to great effect. The contrast of the crunchy caramelized garlic and tender aromatic broccoli seemed to pull all of the flavors into sharper focus. Even when cooking things you've made a hundred times, it still pays to think about combining ingredients, elevating flavors and being able to use everything in the final dish.
