We are fortunate to be friendly with the guy at the fish counter at our local Whole Foods. He lets us know when he has some nice fish heads and we happily take them home with us. Today he had some beautiful red snapper heads. Alex cleaned them up and then, intrigued by the way that the shape of the collars reminded him of chicken thighs, decided to fry them. We coated them in a mixture of yogurt with tandori spices, garlic, tamari and a bit of ruby grapefruit oil. We let them marinate in the fridge for a few hours, dredged them in seasoned flour twice and then deep fried them. They were delicious and we brought them along with us to Christmas Eve dinner for people to snack on while we all prepared the seven fishes.
We served them with seasoned Meyer lemons. The lemons are lightly charred and then topped with buckwheat honey, dried fish peppers and smoked Maldon salt. When you squeeze the lemon over the fried fish you get a fully blended seasoning.
