Here we used the machine and the die #144 to make a straightforward semolina noodle with a bit of additional bite thanks to the addition of 0.5% baking soda. This pasta shape is alluring for its name which means cockscomb and also its shape which closely resembles its namesake. The additional ridge on the noodle is wonderful at capturing and holding sauce. The shape sparks pairings and preparations from a ragout of cockscombs and sea urchin to a great excuse to revisit American Chop Suey.
