Turn to radiatori. This is another new shape we have been working with. It has a slightly cheeky feel to it modeled after a radiator and often seen in a variety of colors but lacking in flavor. For our first run with this shape we made a straight semolina noodle. It holds cheese sauce extremely well and has me itching to explore a bunch of new "macaroni" and cheese preparations. The shape also has us looking at spicy and thick ragouts to pair with this ridged noodle. In the flavored dough front we are looking towards citrus inspired by orange peels sitting on the radiator in the winter perfuming the air. If we look further at what sat on the radiator we could just end up with lamb in chocolate sauce. It is better to be inspired by an idea and not to directly replicate the inspiration.
