We were at Elliott's Oyster House for lunch yesterday for our oyster fix. The plan was to consume a series of raw oysters. When I saw oysters Buffalo style on the menu I could not resist because it sounded so crazy that I knew it just might work. And boy does it. These oysters were meaty and plump and perfectly cooked. Crisp on the outside with a meltingly rich and creamy interior. They were lightly coated in a tangy buffalo sauce that wasn't too hot and arranged next to a thick blue cheese dressing. These oysters were awesome. I look forward to playing around with variations in our kitchen.
