(pizza oven from Delancey in Seattle)
We spent the evening cooking up another version of pizza dough modified from the no-knead recipe in our book. This version added some sourdough to the smoked flour variation. I am coming to the conclusion that we will be "needing" a pizza/wood burning oven. Sure, our tricked out grill with fire bricks is making some incredible pizzas, but I am looking for more speed, volume and the introduction of wood. The more we travel, taste and read the more its spot on the wish list rises. During my searches for ovens I came across this really cool set up of a pizza oven built onto a trailer. Not that we need a mobile pizza oven, but think about how this could be parked in your driveway, parking lot, loading dock wherever. Imagine wood fired on demand with relatively few hassles and plenty of return.
