This was one of the cool ideas that came out of our workshop today. We prepared lobsters as we do in our Complete Lobster. Once they were partially cooked, we worked together to develop new ideas for the parts and pieces. I took one large claw and made lobster filaments. Instead of making them into a "lobster and corn risotto" we opted to deep fry them. The result was a bunch of intense crispy threads of lobster interspersed with a few pieces that retained just a bit of chew. They were surprisingly delicious and addictive. The possibilities are endless as both a garnish for a larger lobster dish or as garnish to finish other seafood preparations. The only question now is which idea to pursue first..
