As I continue to work on pizza and imparting flavor into it Aki and Amaya are growing a bit skittish. Thankfully I have the wonderful skill of ignoring their moans of "pizza again" and focus on the task at hand. The dough continues to improve and now we have a naturally leavened version under our belt as well. We will be sharing the recipes at some point, but I cannot say specifically when. What I can share is this image of our grill with a just about cooked pizza being scented with the leftover fruit wood John Shields left us with. I really should have been doing this from the begining and even have notes that suggest I planned on it. It took being handed a box full of wood for me to actually put the idea into practice. I can say these are the tastiest pizzas we have made to date.
