The idea of mimicking parsnips as geoduck did not pan out in our first trials. Thankfully, I was able to take the parsnips in a whole new direction. I was inspired by the chewy texture of the parsnips and out daughters love for tootsie rolls that now come in a rainbow of flavors. We took the parsnips and vacuum sealed them and then rolled them flat. (These parsnip sheets will more than likely pop up in other dishes as well.) Once the parsnips were flat we froze them so that we could cut them and manipulate them. We cut the bag off of the parsnips and then cut them into strips. We then let the parsnips come to room temperature and rolled the strips into tubes the size of tootsie rolls. Then we used candy wrappers to seal them up. We store them in the refrigerator and when we pull them out and unwrap them they have the shape and texture of a tootsie roll with the intense flavor of a parsnip.
