We, (ok let's set the record straight, I) bought a couple of "tomahawk chops" looking for a great grilled meat experience. They have clean lines, are trimmed down to the bare essentials and they come with a handle. The trouble is, all of the trimming left a lot of good stuff on the cutting room floor. And if you are married to a chef, who enjoys freeing morsels of goodness from a steak a tomahawk chop is a downright insult. I should have known better. Besides, one of my favorite joys is licking the juices from a grilled steak off of my fingers. Our need to make food beautiful and pristine takes away some of the processes the diner actually enjoys.
