We were having trouble with larger diameter noodles. As we extruded the noodle and arranged them flat on the trays they would hold their shape. The extruded noodles would begin to sag and loose their round shape. When we cooked these noodles they would cook up flatter than round. Then it dawned on us. We could stand the noodles up as we extruded them. This would allow them to hold their shape and set. And if we stored them this way we would make sure their shape was preserved. The large paccheri we made held their shape beautifully through the making, cooking and eating process.
