It started again with the tastiest beet ever. We wanted to slice it very thin, like shaved ham. We vacuum sealed it and put it in the freezer. When it was rock solid we cut open the bag and started shaving. The result is these gorgeous beet petals with the texture and appearance of air dried ham. The process is not a short one. But neither is curing a ham. So why should we be afraid of taking the time to do it with vegetables? We shouldn't.
