Many long flat noodles are rolled out. The initial allure of the pasta extruder was to create noodles and shapes we could not do in another way. But flat extruded noodles are incredible and efficient. They extrude quickly. These delicate noodles are a blend of semolina and whole wheat. They work wonderfully as a nest for an egg: fried, steamed, poached, onsen. They are great with roasted mushrooms or just toasted garlic and smoked chile flakes. We have found that these and other flat noodles need to be cooked in small amounts. Otherwise they tangle and knot into balls.
