We wanted to see if we could make cavatelli with Cool Ranch Doritos. It turns out we can. We used the inspiration to flavor the dough. The flavor of the Doritos is very intense. We ground them into a powder and blended them with semolina and all purpose flours. We boosted the tang in the dough with powdered buttermilk. And we bound the dough with ricotta. Now we have a baseline. We can begin to build our own version blending our ranch with toasted corn.
