Tony has sourced an array of incredible spice blends from La Boite. Each blend has specific uses in Tony's kitchen. Someone else might use them differently. Having incredible ingredients at the tip of your fingers allows you to experiment and improvise in the moment. This is often a defining difference between restaurant and home kitchens.
