Tony has sourced an array of incredible spice blends from La Boite. Each blend has specific uses in Tony's kitchen. Someone else might use them differently. Tony may change the way he uses them over time. Once you've stocked your pantry you can play. Having incredible ingredients at the tip of your fingers allows you to experiment and improvise in the moment. This is often a defining difference between restaurant and home kitchens.
