I've been reading The Hoosier Mama Book of Pie: Recipes, Techniques, and Wisdom from the Hoosier Mama Pie Company and it inspired me to play around with using vinegar in my pie dough. Honestly I'm not necessarily convinced that it's making a big difference, but as long as I'm adding vinegar, it may as well be a good one. Here I've used O Ginger Rice vinegar for the crust of a pumpkin pie. I'm not sure how much of the flavor will stay in the pie, but it sure smells good now.
