I had raita on the mind. We blended yogurt with Cabot Ranch Dip. We peeled and seeded a cucumber and cut it into small squares. Then we took the stems from asparagus and cut them into small wedges, discarding the woody ends. We mixed the cucumber, asparagus and yogurt-ranch together. A simple, clean, bright condiment was re-imagined. A few mint leaves and a squeeze of lemon juice folded in right at the end finished things off nicely.
