We finally made the leap to make brown butter sugar. We combine toasted milk solids with sugar and salt and then pulverized them in the blender. The resulting mixture has the consistency of powdered sugar with the toasty, nutty flavor of brown butter. We used it for the first time to coat doughnuts. Brown Butter Sugar
500 grams sugar
150 grams toasted milk solids
2 grams salt
Put the sugar, toasted milk solids, and salt in a blender and puree to a fine powder. Use immediately or store in an airtight container at room temperature until you are ready to use it.
