Today as I hand washed the sheet pans for Curiosity Doughnuts, I had time to reflect on their importance and how they are a good reminder that every piece of equipment is important. Sheet pans are an after thought, everybody uses them, but hardly anyone treats them with care. Sheet pans are an invaluable support system in all kitchens. They can be trays, organizers, lids, and for baking, roasting, and resting. The issue is that cooks take care of their knives and tweezers and thoughtlessly abuse sheet pans. They don't think about them because they are always there. And because of this sheet pans are tossed around. Ingredients are burnt onto them. The nooks and crannies are often missed in the cleaning process. We do it on our kitchen. Our sheet pans are worn. We should be taking better care of them. These shiny new pans have inspired me and we will do better going forward.
