I have no idea why it never occurred to me before to use a rack to blind bake my pie shells. Perhaps because I don't blind bake my crusts very often? It makes sense, the rack allows for air flow below the pie pan and encourages more even cooking. It was a successful experiment, if I do say so myself, and one that I will happily repeat the next time I'm making strawberry/chocolate/banana cream pie.
It's the small breakthroughs that make every day an adventure.
