Preheat your oven to 400°F. Clean your brussels sprouts and split them in half. Line a sheet pan with foil, grease it with olive oil, and sprinkle a thin, even layer of salt over the bottom. Lay the brussels sprouts out in the pan, cut side down, and top each sprout with a slice of pepperoni.
Bake for 25-30 minutes until the pepperoni is crispy and the sprouts are a deeply caramelized on the bottom.
Transfer to a serving bowl and try not to eat them all before you can get them to the table.
