We made potato salad complicated. I didn't realize it until we were done with the dish. We combined soy sauce marinated eggs and gently cooked potatoes. The spark for the combination was a visual connection. We cut them both in half and charred the exterior. We made a cucumber-buttermilk dressing to pool underneath them. We drizzled lemon oil over the tops of them and added scallions and Maldon salt. The dish was bright, clean, rich and recognizable. But it certainly should have been better with the ingredients we had on hand. Had we made potato salad proper we would have been a lot closer.
