Nduja is a spreadable salami made with pork and heavily spiced with chilis. We have made our own flavored with gochujang. These days we have been working with La Quercia's Nduja Americana. We used it to enrich our fresh polenta at American Noodles. Since then I have been looking it as an essential building block. I want to and plan to use it everywhere: in butter for corn on the cob, in scrambled eggs, to finish potato puree and dress roasted potatoes, to flavor cream cheese for our bagel project, in a pot of baked beans, in hollandaise sauce, as the filling for ravioli. "Nduja and..." is a new mantra.
