We have been on a long road exploring the potential of noodles. Our current viewpoint has us revisiting some past creations with intense flavors. With these bases in hand, now we are looking at combining flavors to complement each other. That does not mean we are looking for noodle harmonies. In fact, sometimes the best combinations bounce off each other creating experiences we would not have otherwise encountered.
Today we revisited our cocoa-cayenne noodles and our pumpkin noodles. We kept the cocoa noodles the same and then we substituted smoked paprika for the ras al hanout in the pumpkin dough. After we extruded the two sets of noodles and let them air dry, we combined them. The visual speaks of the season. The flavors bounce off each other, subtle and sweet contrasting with the strong and slightly bitter. Together they are a strong foundation for a cold weather sauce such as our pepperoni bolognese.
