Thin crust is not the hallowed pizza in the pizza lexicon. There is a special place in the pizza kitchen for thin crust pizza. Tonight I had the opportunity to crush Colony Grill pizza. The crust was thin and pliable. Each slice folded beautifully. The toppings were generous but not gluttonous. I had my pie with cherry peppers, bacon and pepperoni. The grease dripped onto the pan and I happily mopped up the flavorful fat with the last bits of crust. Now it's time now to get back in our kitchen and tinker with replicating this delicious experience.
