Some know the beginning of fall as September 22. On that day our calendar is marked by the arrival of amazing wild brook trout roe from our friend Steve Stallard of Blis. Steve is the consummate professional, working hard to create delicious ingredients that allow chefs to be genius rock stars. This roe has been part of our arsenal since its first arrival in our kitchen in 2005.
It is always exciting when the roe reappears in our kitchen. Maybe this year we will follow Steve's original guidance and serve the roe with buttered toast; buttered toast ice cream that is.
