I spent a good amount of time at the Winston CVap Booth at this years Star Chefs ICC. The CVap folks are ham freaks in there own right. So, it was with little surprise that I saw the famous Cinco Jotas team setting up and taking stage alongside our good friends. While I was there I was able to take some time and watch the incredible ham slicer from Cinco Jotas slice and arrange plate after plate of expertly sliced Iberico ham. As an involved observer I happily tasted as much ham as possible, just shy of being rude.
The folks from Cinco Jotas are not only concerned with producing/creating/refining amazingly delicious ham, they are intent on making the pleasure of consuming their ham a beautiful experience. I is sliced by hand and arranged with artistic refinement on plates. And when the crowd waiting to taste it grew, the sliced ham was hand delivered with polished ham tweezers. I remember the flavor of the pork, as well as the ritual of the service. It was an experience that makes me smile, salivate, and crave that particular sliced Iberico ham.
