Chocolate bark lets us combine ideas and deliver flavors quickly and easily. It is a medium for sharing experiences. Recently we revisited our Fruity Pebbles and white chocolate. In this case we kept it in a bark form rather than pulverizing into a crumbs. It brought smiles and sugar shock to everyone who tried it. The other bark is candied pecans that were pulverized and added to dark chocolate. It resembles pecan turtles, only a bit less gooey. It captures the essence of the chocolate + caramel + pecan indulgence. For our barks we melt the chocolate in the microwave and then fold in and sprinkle on our inclusions. We spread the mixture on parchment paper. We top the bark with a second sheet of parchment and roll it thin if the inclusions make the chocolate mixture thick, like with the fruity pebbles. Then we patiently wait for the chocolate to harden so we may break it into pieces and start eating.
