It was a small step forward to apply our caramel glass to our vanilla pudding stuffed doughnut, creating our creme brulee doughnut. Using the caramel sugar enables us to apply an even layer of caramel. Since the sugar is already caramelized we only need to re-melt it into place rather than hammer it with heat to caramelize it. You get to experience the three layers of crisp sugar, creamy pudding, and tender doughnuts in each delicious bite. Using the pulverized caramel is functional and delicious and allows us to recreate a classic dessert as a new doughnut experience.
