When I spent the day in the Arcobaleno test kitchen I was given the opportunity to begin to learn how their bigger machinery works. I was given a hands-on tour of their multi-function machine, the AMF 160. It is designed for serious pasta production, revolving around sheeted noodles. The machine mixes and extrudes rolls of dough. It can then cut noodles and form ravioli of many shapes and sizes. What is the purpose of playing with this machine? To learn and to discover. I had no idea about the functional simplicity of the technology. The machine is huge, efficient, and easy to clean. If I was entertaining making ravioli and large scale pasta production I would be all over this machine. Of course, looking at its size and capabilities, I do wonder if it's possible to make one smaller that would fit in our test kitchen.
