I have an affinity for the dark, toasty notes of malt. I often think of it as sweet-side umami. In the land of doughnuts we had not yet featured the idea or flavor of malt. Then, one day, walking the candy aisle, yes I do this often, my eyes landed, well became fixated, on the boxes of Whoppers. Eureka. Broken whoppers would be an incredible doughnut topping. I bought several boxes and rushed to the shop. I smashed the whoppers into pieces. Then I waited. I still needed a doughnut to test the idea on. Over the weekend I glazed our marble doughnuts and sprinkled on the whopper pieces. The combination of the chocolate covered crunchy malt pieces with the marbled dough proved to have an amazing flavor amplification effect. The doughnut tasted more intense and the whopper pieces behaved as sweet salt adding crunchy toasty and chocolaty notes to each bite.
