We were playing with octopus in a recent workshop. As we were cleaning the tentacles of cooked octopus I took one and sliced it into thin rounds. I put the rounds into the fryer. The octopus sizzled and popped. It turned golden brown and crispy. We pulled the chips from the fryer and seasoned them lightly with salt. The octopus became the most delicious savory chip. The flavor of the ocean, the sweetness of the flesh, and a nutty fried crispiness all came together one sublime bite. Octopus has never tasted so good. And of course we will definitely be trying this with cooked squid in our near future.
