Anyone who has been reading this blog for a while knows that Easter means Grandma Kitty's Strawberry Pie. We celebrate the holiday with a family dinner on Saturday night and that pie is what we serve for dessert. This year Amaya asked me if I would put raspberries in the pie. I knew better than to mess with tradition for that meal but on Sunday, when I realized that the two pies had been almost totally demolished, I happily whipped up this berry pie. I added raspberries to the original recipe to fill up the pie pan but I didn't change any of the other measurements for the strawberry pie. The cooked berries were entirely strawberry (although I subbed cranberry-cherry juice for the cold water) and the ratio of berries was probably 2:1 in favor of the strawberries. It worked out beautifully. Every stray raspberry burst across the palate with it's more acidic berry zing to contrast the gentler sweetness of the strawberries. Add a little whipped cream and it's total indulgence. It's definitely a combination that I'll be making again.
