The combination of hot chiles, presumably Calabrian, and minced vegetables balanced with oil and vinegar creates an indispensable condiment. Originally I purchased the jar of hot spread sauce as a quick upgrade for sandwiches. Upon tasting it I became enamored and have now been integrating it into everything: from pasta sauces to braises to quick pan sauces for meats and dressings for vegetables. From the jar comes the inspiration. Now with the condiment on hand I am faced with two paths. The first is to continue to lean on the jar and utilize the flavorful ingredient to enhance and excite dishes spoonful by spoonful. The second it to begin creating our own explosive mix that we may then rely upon as a building block. Both paths are worth walking down. Some days we need a short route, while on other days the long walk is essential.
