At first glance it may appear that my fetish in the world of doughnuts has taken over my thought process and our digital notebook. What that assumption misses is the process, the dive, the drive, the examination of ideas, discoveries and failures can, and should, be integrated to the foodstuffs outside doughnutland. The failure to do so means missing the opportunities that arise from each new discovery.
When we take an observation and refine it, that is where the opportunities and challenges lie. Here we are exploring our knowledge of the benefits of LM pectin in two glazes: milk chocolate and passion fruit white chocolate. The pectin allows for a faster set and a tender flexible crust. The difficulties become apparent as the wide world of ingredients are employed. When we create and overcome new obstacles, the possibilities become endless.
