We were helping out with an event and were asked if we could bring some Curiosity Doughnuts. I knew the timing would be off for our yeasted or even the apple cider doughnuts. But I could fit our crullers into the the crunch of prepping and make the doughnuts happen for the event. The twist, I had to make them small. Thankfully we had explored miniature crullers on occasion when we were finishing a batch and did not have enough dough for a full size. I observed these minis cooked up beautifully and ate deliciously. I set to work. We finished the miniature doughnuts with a modified version of our yuzu glaze, using lime juice and making a buttery buttermilk lime glazed cruller.
