We have explored the idea of funfetti. It adds a smile and a childlike twist to an idea. But isn't funfetti only the addition of rainbow sprinkles? Yes. By sprinklizing a dish it becomes funfettied. I wanted to take the idea of funfetti and add some structure and character to it. We started with shortbread cookies. I pulverized them with white chocolate and salt until a they formed a course struesel-like crumb. At the last moment added rainbow sprinkles and pulsed the mixture just enough to combine everything. The streusel topping is nutty, rich, sweet, and fun. It allows us to either top doughnuts or frozen custard with a flavorful funfetti element. Outside doughnutland the funfetti streusel is destined for cakes, cookies, crumb toppings and more.
