The union of broccoli rabe, sausage and tomatoes is a perfect storm of flavors destined for noodles. The way to improve the dish is to improve the elements we add and look at the cooking process. Haphazardly thrown together these ingredients will produce deliciousness. With thought in sourcing and care in cooking the combination becomes revelatory.
What was originally left off this post was the improvement that can be made in messing with the original ingredients. In quick thoughts cooking the broccoli rabe with yuzu kosho and fish sauce, enriching the tomatoes with gochujang and folding fermented black beans into the sausage would provide delightful elements of enhancement, altering the original and building upon the foundation. Are all three adjustments needed? Probably not. Looking at one of the three would make the classic contemporary. But using a judicious approach with all three might lead to a bowl of noodles that improves upon the original.
