Cloud cream is our messed up version of Stella's Cool Whip. We used the butter version of her marshmallow cream filling and lightened it with half the amount of cream required for the Cool Whip. I added a bit of salt and some additional vanilla to the cream. The cloud cream is light and creamy. It has more structure and fortitude than the Cool Whip. It is luscious and decadent, an ideal complement to a doughnuts.
Ever since the crullers first appeared on the scene our guests have asked if we would ever fill them. Our cruller is not that easy to fill, with its thinner walls and craggly irregularities. With the development of the cloud cream, I suddenly saw possibilities. I filled the crullers in three spots allowing the cream to spread inside the crannies. From a distance they resemble our vanilla glazed cruller. The difference is clear as the cloud cream bursts out with the first bite. This is true indulgence.
