The classic ploughman's lunch consisted of bread with cheese and pickles. It's a concept that I revisit on a regular basis. While grilled cheese is delicious, when I'm working at home I tend to make cheese toast. It's faster and easier--with the toaster oven, and I like the combination of textures, especially when I have a fresh loaf of Tuscan bread. The bottom of the bread is crisp and chewy while the top is tender and gooey from the melted cheese. I add kimchi to individual bites so it doesn't cool off the cheese too quickly. The contrast of temperatures adds something to each bite. The kimchi gives the toast some tang and heat that balances out the rich cheese and makes every bites a little more vibrant and special. It's not a fancy lunch but it is delicious.
