We used the lasagna die for the AEX18 to make lasagna sheets. We used die number 13 to make extra thick spaghetti. Both preparations focused on our appreciation for thicker noodles. The lasagna die is adjustable and allows us to make noodles thin enough for ravioli and thick and sturdy sheets for lasagna. The thick spaghetti is the antithesis of fresh extruded pasta. It takes at least 7 minutes to cook. When it is cooked the time is worth it. The spaghetti has a dense chew and a presence that we crave.
