Amaya and I are big fans of angel hair pasta. We like to eat it very simply, cooked until just tender and tossed with excessive amounts of butter and Parmigiano cheese. I always make a lot because we both like to eat the leftovers. Amaya happily consumes them warmed up for breakfast the next day, sometimes simply microwaved and sometimes fried underneath a couple of eggs. I personally like to re-cook the pasta by itself. I slide it into a hot pan and let it fry in its own fat. I turn the noodles often so they become brown and crunchy throughout with a tender, chewy core in the center. The flavors of the butter and cheese come through more vibrantly in each crisp, caramelized bite. The contrast of the almost rubbery center gives you something satisfying to sink your teeth into. This is not a meal that I share with Alex, it's definitely one best savored on my own.
