I was looking for a vinegar to season our sun dried watermelon. It made sense to make watermelon vinegar. I vacuum sealed watermelon trimmings and rice vinegar together. I mashed the watermelon into a rough pulp and refrigerated it overnight. I cut the bag open and strained the mixture. The vinegar became rosy pink. It picked up the floral aroma of the watermelon while keeping the sweet sharp edge of the vinegar. The speed and ease in which I was able to make the infusion happen has me excited about exploring new ingredient and idea specific vinegars in the future.
