I prepared 4 bulletproof beurre montes for pasta-fest tomorrow at the Pizza and Pasta Expo. I am fortunate to be making and cooking in the Arcobaleno booth. I will be serving an array of noodles in the style of those we have made for American Noodles. The monte flavors are: original, Frank's Hot Sauce, jalapeno-soy, and farro-miso. They bring flavor, fat and function to a la minute pasta making. Stay tuned for the rest of the dishes.
