Years ago we came across maple cotton candy. I loved the idea of it. Recently I came across maple cotton candy for sale in the aisles of our local Whole Foods. I couldn't pass it up. I bought it and cracked open the lid. The candy was light and airy with a delicate maple flavor. I knew we needed to use it on a doughnut.
I am a blueberry pancake junky. It made sense to make a blueberry and maple doughnut and top it with the cotton candy. We used our super cakes as the base. We added maple glaze and blueberry crumbs. We nestled a tuft of cotton candy in the middle.
