We were planning on mashed potatoes the other night when we were overcome by a sudden desire for chili and nachos. That happens to everyone, right? So instead of mashing the boiled potatoes, we dried them in the pot and chilled them on a sheet pan. The next day we pulled out some steaks and paired them with spicy spinach and cream fried potatoes with bacon. We took some leftover bacon and cut it into matchsticks. Then we set it in a pan with some butter, just until they started to crisp up. We added the cold potatoes and let them brown lightly on one side. We gave them a quick toss and tipped in some heavy cream and a good sprinkling of salt. We cooked them until all the cream had been absorbed and the potatoes had browned. They were crispy and velvety, creamy and rich. Sometimes leftovers make the best parts of a new meal.
